Green Chili and Pork

I am feeling tired and quiet today. I had a cup of Earl Gray a bit too late yesterday and ended up staying up past midnight.

But I managed to get to the grocery and other little shops on High Street this morning. Got Roxi a new pair of school shoes–they have to wear dress shoes here. Back in Texas they HAD to wear athletic shoes. The dress shoes look nicer, but don’t last very long–in this case three months.
Also picked up some stuff for a charity project (shoebox Christmas–does anyone else do this?), mostly art supplies and girly stuff like a purse, bath things, scented lotion, and a little candy.
I’ve been feeling very uninspired about cooking lately. But I’ve been wanting to try making Green Chili and Pork, so I picked up a nice roast while I was in town. I am planning on freezing little single sized portions of this “for later”. I’ll probably also make Homesick Texan’s flour tortillas
Interestingly, I bought a bunch of dried beans at the market this morning. I’ve never really liked beans very much, but lately they’ve been so comforting. Must be the cold weather. Anyway, I bought pinto, black, and French lentils (which I cannot seem to get enough of). We’ll see what will become of these little bags.

    I made a pork roast last night, and the leftovers will be tucked into H.T.’s tortillas with green chili and potatoes.

    I’m not sure I could live without pinto beans.

    Having spent some time living in Mexico I discovered Sanborns and discovered their Tacos de Pollo. now I am a fairly decent cook [would not have lasted this long with a Frenchman had I not been]and I prefer corn tortillas, but cannot master the art of frying the rolled buggers without burning them or making them too greasy. I shall watch with interest in case you come up with a recipe.

    Yeah, some mornings are just kind of like that…
    I did a Christmas shoebox charity thing last Saturday, and it was lots of fun. Everyone was in one place, all wrapping and packing up toys and gifties. It’s fun.

    BSR–Mmmm. That sounds delicious! I love potatoes in my soft tacos. Do you have a good pinto bean recipe? I was going to try out one of Homesick Texan’s. BTW, do you know the name of those Tex-Mex appetizers that are basically like eggrolls but wrapped in corn tortillas? I’ve been trying to think of their name but am drawing a big blank.

    Moannie–I actually didn’t know about Tacos de Pollo. I did a Google search and boy do they sound good! I wonder if maybe the corn tortillas might be a little different here and that is contributing to your troubles? They do seem a little more “floury” than the ones back in Texas. I’ve ordered some authentic ones from The Cool Chile Company. I’ve also made my own, but it’s kind of a lot of work! I am curious about the Tacos de Pollo and may pursue this :-)

    Akelamalu–We were there a week before you! And yes, the weather was delightful. There was only one day that it rained. We were down in the Salt Mines, so it didn’t matter. Thanks for stopping by to comment!

    Chris–It is fun and a nice way too get into the Christmas spirit.

    Christine–Whoops, you slipped in while I was publishing my comment… You are right, I am sure my being sick has to do with my slump. I’ve had such an earache this week and it’s really gotten me down. Happily I am feeling better. Just really tired of being sick!!

    And yes, I forgot the name of the organization, but basically, you wrap up a shoebox and the lid separately and then fill it up with goodies for a boy or girl of a certain age. Do your kids do a holiday community service?

    For pinto beans, I just cook soaked beans in salt pork, and or bacon with garlic, a touch of cominos (ground cumin). Salt (needs lots) and pepper to taste.

    The beer thing over at H.T.’s is very, very good as well.

    I’m with BSR and you — all about the beans these days. I made HT’s borracha beans the other day. Very yummy.

    I hope you feel refreshed tomorrow. My walking partner, who is usually an energetic maniac, was really off her stride today. Must be the filthy weather.

    We just did a shoebox project. Pretty much with the same kind of stuff that you mentioned, plus a mug and a little teddy bear.

    Reading through the comments AFTER I posted, I will add the following: I think the eggroll thingies are called taquitoes, and the charity project was fun by the Samaritans, I believe.

    jpra, the kids and I are going with some friends to help out at a huge toy drive at the end of the month, organized by a local radio station. It should be fun as well as volunteer work sorting toys.

    When I was small and attended school in Liverpool (‘up North’), we had to wear proper shoes for outside and athletic shoes for inside. But I had problems with my feet so I got to wear one pair of proper shoes (with rubber soles) all the time. Random fact for the day!

    It didn’t really bother me. We were very happy and normal in my little English church primary school. I don’t remember any trauma at all.
