Happy Pancake Day!

I made some this morning–gingerbread (but forgot to add the treacle). I ate mine with Irish butter and blackcurrant conserve. The kids had theirs with chocolate spread from Holland. Last year we had them with Lyle’s Golden Syrup.
Our company from the States decided to extend their stay by one day. Hurray! It’s been nice to have family visit. Fingers crossed, we might have another family visitor at the end of the week.
This afternoon, Roxi and I have a meeting with the head of upper school to discuss Roxi’s “Four Year Plan”. I don’t remember being this organized back in my high school days.

  1. trying to remember it all says:

I ran into a mom the other day that was talking to me about what things her daughter did for her volunteer work while in high school (she goes to Harvard now). The whole time I’m thinking, “Now I have to worry about this too???”

  2. Just a Plane Ride Away says:

Trying to Remember It All–Yes, it’s not enough just to make good grades and graduate at the top of your class. You have to volunteer, be a leader, be well-rounded, and on and on. The fun just never ends ;-)

  3. Emm says:

Happy pancake day!!! Good luck for the “four year plan” plans! I struggle with four day plans these days!

  4. Kathy Amen says:

I have memories from the ancient past about four-year-plans, so it must have been a traumatic period. Don’t remember if I had an individual consultation about it, though! Good luck! And both of you remember, nothing is written in stone and you can always head off in a different direction if so inspired!

  5. Pigtown-Design says:

Ohhhh… pancake day! just a sprinkle of sugar and some lemon juice!

  6. Fantastic Forrest says:

International House of Pancakes has a coupon for a free short stack of buttermilk pancakes today in honor of the celebration. Is it horrifically lazy of me to just eat theirs instead of cooking?

We went to my son’s future high school last week for orientation. The graduation requirements and options for AP or Honors classes seem a thousand times more complicated than when I went to school. With ugly budget cuts looming, maybe some of those choices will disappear. Sad thought.

    Happy Pancake Day, JaPRA!

  7. Cynthia says:

Oh yes…pancakes…and I was just about to give up winter weight food! Glad you are having a wonderful time with your company. When your free again, come over to Oasis and visit my puppy. <3

  8. lucylucia says:

I think I’m going to celebrate with some frozen wheat eggo waffles today for dinner! ya!

The trick for admission in to a highly selective school (assuming grades and such are good): volunteer, volunteer and volunteer some more. The more “leadership” opportunities that Roxi can find the better – and all this before her senior year! yikes.

  9. Christine says:

Happy Pancake Day. Catholics celebrate Ash Wednesday tomorrow, and are asked to abstain from eating meat. Good luck with the meeting this afternoon.

  10. david mcmahon says:

    We made pancakes too.

  11. Chris says:

I know! I can’t believe how kids are in meetings and organized activities and asked what they want to focus on most in sixth grade! What’s going ON!?

In other news, if you want company from The States, just let me know.

  12. Pamela Terry and Edward says:

I’ve never tasted gingerbread pancakes, but now that I”ve read this..it’s all I can think about!

  13. Laurie says:

    Happy pancake day!!!

  14. A Modern Mother says:

You take the best pics JAPRA. We had American style pancakes too –with maple syrup and sprinkled with strawberries and raspberries. Yum.

  15. Just a Plane Ride Away says:

Emm–I know what you mean! Plus my brain is muddled a bit from having guests.

Kathy–It was actually ok. They only had us sign up for a two-year. More later.

Pigtown-Design–That sounds good! I meant to try them that way. We aren’t big pancake eaters…

Fantastic Forrest–Heck no! I’d definitely go out. And regarding the school meeting, I think I need another one to talk more seriously about AP courses and graduation requirements. More later.

    Cynthia–A PUPPY?!?! I’ll be by in a mo ;-)

David–There is something happy about everyone eating pancakes on the same day :-)

Chris–Interestingly, the HS head spent most of the meeting talking with my daughter and I was, you know, just there. It is nice to see my daughter making these decisions. I think she chose wisely.

Pamela–They’re easy. Just add a dash of gingerbread seasoning to plain pancake batter: molasses, vanilla, nutmeg, ginger powder, cinnamon, cloves, whatever else you like. Yummy!

Laurie–Thank you! Hope you had a fun Mardi Gras :-)

A Modern Mother–Hurray! We mad American style pancakes, but then ended up rolling them up like crepes. My six year old nephew (from Texas) said, “Aunt JaPRA, Can I please have another tortilla with chocolate on it?” He must think we eat some funky tortillas here in England. LOL!

  16. Just a Plane Ride Away says:

Lucy Lucia–Eggo Waffles! Yay!! Thanks for the leadership tip. I had also heard “sports” was an important thing too. Do you know? What I wonder is, if someone is going for a degree in Opera or Musical Theatre, do the schools really care about sports?!?!

Christine–I didn’t know about the no meat Ash Wednesday…

  17. lucylucia says:

Oh they totally don’t care about sports! :) Schools that emphasize the arts are more concerned about exposure to said arts and involvement in them. I’m not too clear on what a drama school will look at (most probably auditions of some sort), but art schools want the good grades, good activities and a great portfolio! I can’t imagine that Roxi being on a softball team would add any discernable advantage. She will prove her ability to juggle different responsibilities by taking the AP (or IB) courses, involvement in the school drama productions and some kind of volunteer activities with a club(s) or what have you. I know it sounds ridiculous how soon you have to begin thinking about higher ed requirements, but it’s definitely to Roxi’s advantage to have these things in the back of your mind. :)

  18. Bee says:

My children insist on crepes for Pancake Day — with lemon and sugar, as Meg mentioned.

Your gingerbread pancakes sound (and look) yummier, treacle or not.

    Four Year Plan! ARRGGHH!
