“Five Minute Chocolate Cake” in cupcake form straight out of the microwave. Not beautiful but certainly delicious.
I haven’t talked about cooking much lately–I guess because I’ve kind of been in automatic mode (same-old, same-old). But here are some recipes I’ve tried recently that we’ve really enjoyed.
Paula Deen’s Salmon Croquettes. A wonderful, old-fashioned recipe just like mom made. For something a little zippier, you could try Ina Garten’s Salmon Cakes.
Jamie Oliver’s Fish Pie. I love the creaminess of a traditional fish pie, but this one is yummy too and probably better for you (sigh). I didn’t have smoked haddock or prawns, but the recipe turned out very nice anyway.
Simply Recipes Dad’s Stuffed Bell Peppers. Again, another comfort food mom used to make. I’ve made this recipe a couple of times now. The third time I made it, I substituted chicken for the beef and added some cumin and chili powder to it. It was good that way too!
Jeanne Lemin’s Kale Soup. This vegetarian soup is delicious as is… BUT I have to admit to adding some slices of Polish smoked sausage to the soup the second day. OMG. I am going to make this every week until I can’t stand it anymore.
Five Minute Chocolate Mug Cake. Christine posted the recipe on her blog a few months back. Then my friend Barbara gave it a go earlier this year. When I came across the recipe again yesterday, I knew I needed make it for tea. I did change a couple of things–I used melted butter instead of oil, I poured the mixture into cupcake liners (these were 2/3 size) instead of using a mug, and I used 1/2 of a praline Easter egg in each instead of the chocolate chips. I agree with what everyone has said about this recipe: DANGER!!! Instant chocolate cake gratification. Oh dear. People have recommended using Nutella as a frosting after the cake has cooled a bit. I think marshmallow fluff would be nice too. BTW, this actually does make quite a bit of cake. I think it is enough for at least two people. Oh, a scoop of vanilla ice cream would be a wonderful accompaniment, if you happen to have any sitting around :-)
And here are a couple of recipes I want to try but haven’t yet…
Homesick Texan’s Tacos al Carbon. What I really like about this recipe, besides the fact that it brings back so many wonderful memories of home, is that Lisa created this recipe for people who don’t have access to an outdoor grill. When I saw this recipe on HT’s blog, I wanted to wrap my arms around my computer and press my face against this picture–a big, dorky virtual hug. Even now, when I go back and look at this post, I get a little hitch in my chest. I’m quite fond of tacos al carbon al la Ninfa, can you tell? It reminds me of my childhood in Houston.
Magda’s Greek Spiced Meatballs with Fennel Seeds and a Yoghurt-Mint Sauce or “Keftedakia me Marathosporous kai Saltsa Giaourtiou-Dyosmou”. Magda is a Greek expat living in the Netherlands. She has the tastiest looking recipes on her blog. I can’t wait to try this one!
Have you tried any new recipes lately? I’d love to add to my vegetarian repertoire, especially. And I’d love to try making fresh pasta–like the domestic goddess herself (Nigella Lawson, you know).

I LOVE cornbread stuffing. My husband prefers regular bread stuffing–the kind he grew up on. His loss–LOL! Mmmm, baked ziti sounds divine!

A taco cart! I was never brave enough to try it back in Texas. At some point, Homesick Texan was scurrying about NYC looking for the best taco truck :-)

I love baking. I’m not a great cook. But Cathie made corned beef and potatos the other night, and it was SO GOOD! I’m going to ask for it again.

That looks divine and just looking at it, I think I would add vanilla ice cream too.
Yeah, I made it again last night and it would definitely be good with ice cream.
We’ve made Jamie Oliver’s fish pie, and I like it better than most because I can’t handle cream (lactose intolerance.) I’ll have to check out your other recipe recommendations. Thanks for sharing!

Chocolate cake in 5 minutes? How great is that? I want some! I haven’t eaten chocolate cake in a while, time to rectify that.

Magda, I made the chocolate cake again last night as a sort of “midnight snack”. It was perfect for three small servings and not too many messy dishes :-)
Japra, just back from vacation, had to stop in to say hi, amid piles of laundry. How creative to use muffin cups for that choc cake recipe. I see you’ve been on a delicious cooking spree!
Christine, I made that 5 minute chocolate cake again last night. Roxi was astounded and wants to learn how to make it. It’s so good and easy to make when you HAVE to have chocolate cake ;-)
