A few recipes

Two great things. Florence, Italy.

The Florence post will go up tomorrow. Meanwhile, here are some recipes for you to try. It just so happens that I am serving this for dinner tonight:

Pulled Pork Barbecue (cooking it in a crock pot)

Spicy Slaw

No Egg Tirimasu Edited to add:  Aledys tells me that she can’t access the recipe for Tirimasu, so here it is (adapted from Sainsbury.co.uk)

175ml strong black coffee (I used espresso)
6 tablespoons coffee liqueur
About 175g savoiardi biscuits (Lady or Sponge fingers–I ended up needing 1.25 packets for my dish)
250g mascarpone cheese
300ml double cream, whipped to very soft peaks
4 tablespoons confectioner’s sugar
1 teaspoon cocoa powder

  1. Mix together the coffee liqueur.
  2. Put half of the biscuits in a serving dish and pour half the coffee mixture on top.
  3. Mix together the mascarpone, whipped cream and confectioner’s sugar. Spread half over the biscuits.
  4. Place the remaining savoiardi biscuits on top and pour over the remaining coffee mixture.
  5. Top with the remaining mascarpone mixture and smooth the surface.
  6. Chill for at least 2-3 hours (I heard overnight is better). Lightly dust with cocoa powder before serving.

Note: I have never made tiramisu before and was worried that the coffee would make a mess with the whipped cream mixture. However the lady fingers (sponge fingers) soaked up the liquid almost instantly.

    Mmmm… I’m hungry!!
    “Pulled Pork Bbq” – the “pulled” part, refers to the pork or to the bbq? I am honestly asking from a linguistic point of view! :D I like this recipe! Though the “Boston butt” had me laughing a bit, I have to say.
    I can’t see the tiramisú recipe, the link takes me to a Sainsbury’s website…

      Aledys, the pulling part happens after the meat is cooked (BBQed), so I guess in this case “Pork BBQ” is the roast itself. And isn’t that funny that cuts of meat have different names in different countries? I’ve been trying to find “cube steak”, here in the UK, but so far, no luck. http://en.wikipedia.org/wiki/Cube_steak

      Thanks for the heads up about the Tiramisu recipe. It is on the Sainsbury site, but I guess you have to be logged in to see it. I’ve put it up in the post itself with some of my own comments.

    I am going to have to try the pulled pork – I got a crock pot a couple of months ago and I need to start using it more.

      Julia, it is really easy and good! I didn’t bother with the BBQ sauce. I just used my favourite bottled sauce watered down a touch. I wanted a smoky flavour and we don’t have liquid smoke here. It worked just fine!
